Slow Cooker Potato Stew


As vacation approaches in just over a month, I’m reminded of the fact that I’ll be sporting a lot less clothing than I’m currently in. Aka, I’ll be trading my puffy down jacket, boots and hat for bathing suits, dresses and shorts…oh my! So, you can imagine staying on track is key right now. Not only for my well-being but also for my waistline. However, as I’m not yet soaking in the rays by the beach I am still craving warm, comforting foods. A useful gadget in my kitchen for the job is my slow cooker. This little contraption makes my life a heck of a lot easier by cutting out my time spent in the kitchen as well as making meal prepping a cinch! Continue reading


No Bake Pumpkin Spice Bites

It should come as no surprise to you that I have a little bit of a sweet tooth. Okay, it’s more like a little times a million but hey, there could be worse things, right? I try to manage my sweet intake by making my own treats and opting out of buying any store bought ones simply for the purpose of being able to control what I’m eating. I mean wanting to know what’s really in your food should be of concern, regardless of what it is. The thing about making your own sweets, or anything for that matter, is it’s actually a lot easier than you think. You don’t have to make some elaborate dessert to impress your family or friends. Pumpkin and Mushroom Risotto

It was once said that, “One word frees us of all the weight and pain of life: That word is love” (Sophocles). There is no other emotion that can bring with it such happiness and equally as powerful sadness. Though, without this we really would never experience the wonderful joy of what it is to truly love, even if it may mean the chance of heartbreak.
