There’s so many things to be grateful for. Sure I have my moments when I feel like all hope is lost but then I am reminded of all of the good that constantly surrounds me. I feel fortunate to be able to put things into perspective and say, “You know, it’s really not THAT bad.” Like everything, it’s only a stepping stone. There’s a great quote by the explorer Ernest Shackleton, “Difficulties are just things to overcome, after all.” and he’s right. Avocado and Artichoke Dip

It’s a no brainer sometimes when I create recipes. Like an accidental no brainer if such a thing exists…I simply just think “I feel like having some avocado”, for example, and “oh I could use up these artichokes” and then toss in a little faith and there you have it, a brand spanking new recipe. Baked Sweet Potato Fries with Spinach Cashew Pesto

Ironically as I sipped a glass of Pinot Noir the other night I noticed on the bottle’s label in tiny print was the phrase “silence is powerful”. The irony being that there I was, alone, in silence. It often doesn’t occur to me how busy our lives really become and with that how chaotic the slurry of thoughts and emotions are in our minds. We are constantly on the move, from just trying to get through that very moment to anticipating the next. When we do get a few precious seconds of down time and are able to stop, take a breath, and soak it all in it’s in that very moment that we can truly be present. Continue reading

BBQ Beef Empanadas

How does the saying go? “If at first you don’t succeed try, try again…” or something along those lines? I take this especially true in cooking. I mean not every recipe I make comes out blog worthy or even edible for that matter. So rather than nixing the recipe in the you know what I like to take another stab at it just to be sure, making any necessary modifications if needed.
