A New Years Thought: One year (+ 5 months) of being a Mom

As we brace ourselves for 2019 it’s hard not to reflect upon the past 365 days. There’s so many things I keep reliving, rehashing and replaying over and over in my head…

One of those things I find myself thinking a lot about is that I’ve officially logged one year (plus five months- but who’s counting) as a stay at home/work from home mom. It’s not a topic that’s talked about, like REALLY talked about that much. It’s a bit of a hush hush topic because to some being a stay at home may seem like the perfect, easy life, one we all dream about having. I don’t even like to talk about it because I feel like it may seem that I’m being ungrateful or whining. On the contrary and for the record, it IS something I want to be and I AM eternally grateful for the opportunity to stay at home and raise our daughter. Even though it really is a wonderful life, at times, it can be equally just as hard.

It can be difficult when at the end of the day you struggle to form intelligent sentences. You begin to question your lack of interaction with other adults but secretly hope that you’re just utterly exhausted. It’s hard to want your SO to come home and tell you how beautiful you look despite the dinner smeared across your shirt, knots in your hair and bags under your eyes, because we like to think we haven’t lost all appeal after being swept up by parenthood. It’s hard to feel like you have no one to talk to, no one that REALLY understands what you’re feeling on the inside, no one that can relate to the mixed up emotions, mental and physical exhaustion and the guilt you feel for feeling EVERYTHING for everyone all of the time. It’s hard to want only the best for your child(ren) and try, no matter what, to be that perfect parent because you know that they’re watching and listening even when you think they’re not. It’s hard to find yourself wanting to spend a few extra minutes in the bathroom alone fixing the towels on the towel rack because this counts as you time, every second counts. It’s hard to feel as though you need to make an effort to get dressed up just to go to the grocery store because most of the time the extent of putting yourself together is brushing your teeth and you need to not lose yourself to yoga pants and messy buns forever. It’s hard to work your butt off striving to meet the requirements of being super mom, super partner, super woman, super at everything all while feeling like sometimes you just can’t. Period.

Us moms have a job that is no walk in the park (though sometimes we are known to do that) no matter how it may seem. It’s tiring, it’s messy, it’s never ending (think no vacation days or lunch breaks with a boss(es) that wear diapers and cry over spilt milk, literally) but, most importantly, it’s simply amazing. As physically and emotionally exhausting as it can get we are a part of something extraordinary, we are a part of our children growing up. We are the impact, we share in the experience, we teach, we set an example, we praise and we love so immensely a little version of ourself. We ARE super heroes, super women, who despite what others may see, say or brush under the rug, are strong and amazing in every single way. No we don’t have it easy but we all LOVE what we do. No we don’t nap during the day despite what many think, but don’t blame us for crashing into our pillows at bedtime. No we don’t watch TV and eat bonbons (thanks Peggy Bundy for forever giving us a bad rap), but at the end of the day don’t judge our need for a glass of wine and chocolate. No we don’t need validation but we do like the occasional compliment, who doesn’t.

So, raise your baby’s bottle, cup of coffee, champagne (I mean it is almost NYE after all) or whatever you have nearby and lets toast to us; us stay at home moms, us working moms, all moms, if no one else tells you how beautiful you are today (food stained clothes and indistinguishable goo in your hair included) you are. If no one tells you what a kick butt job you’re doing, you are. If no one tells you that this hard, exhausting work is paying off, it is. To all of us moms out there who stay strong everyday no matter what because that’s just we gotta do, you got this. To what isn’t talked about know that, I’m with you, we all are. We are all in this together. Here’s to the next 365 long days (which will simultaneously be a quick year- seriously though how?), truckloads of laundry that pileup faster than you can do it, thousands of meals cooked, hundreds of hugs given, endless amounts of love, and memories you’ll always have to keep. Here’s to all of that and then some.

In the busy world of being Super Mom finding time to cook a healthy, delicious meal isn’t always easy. My go-to meals are ones that are simple, nutritious, don’t require a lot of time or ingredients and are equally as good! I can’t stress enough, if you don’t have a multi cooker, get one! The ability to cook an entire meal in one pot, like this Spicy Tomato + Chicken Soup is almost too good to be true. It’s the perfect cozy meal for any night of the week and is both healthy and satisfying. I love to top a big bowl of it with fresh, sliced avocado and little sharp cheddar.


Spicy Tomato + Chicken Soup

Gluten-free/Grain-free/Dairy-free/Nut-free/Soy-free

Serves: about 6 large bowls

Prep time: 10 minutes

Total cook time: low 4-6 hours or high 6-8 hours

INGREDIENTS

  • 3 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 c sweet onion, chopped
  • 2- 14 oz can fire roasted tomatoes
  • 1- 9 oz can corn, drained
  • 1- 15 oz can black beans, rinsed and drained
  • 1- 4 oz can diced green chilis (omit or use less if you prefer it to be less spicy)
  • 3 c chicken bone broth
  • optional toppings: sliced avocado, shredded cheese

INSTRUCTIONS

  1. In a slow cooker place the chicken breasts on the bottom of the pot.
  2. Add in the oil, chili powder, garlic powder, sea salt and pepper on top of the chicken.
  3. Next, add in the onion, tomatoes, corn, black beans and chili.
  4. Gently pour in the broth to cover the chicken and veggies.
  5. Cover and set the timer to cook on low for 4-6 hours or on high for 6-8 hours.
  6. When the chicken is cooked through (no longer pink) turn heat to “KEEP WARM” setting and remove the breasts from the pot and shred with a fork.
  7. Place the chicken back into the pot and stir.
  8. When ready to serve ladle soup into bowls and garnish with favorite toppings.
  9. Store leftovers in a tightly sealed container in the fridge for up to 3 days.
