Grain-free Sweet Potato Waffles

I’ve started this new habit of choosing one thought or phrase, often called an “affirmation” (a.k.a positive self-talk), at the start of each week. I put this phrase in my phone, write it on my list of things to do for the week, anywhere I know I will come across it frequently as the week goes on. The phrase can be anything from “Don’t sweat the small stuff” to, this week’s, “I am fearless”. It can be anything I am feeling in that moment that may need a bit of extra special attention. I notice that by physically putting the phrase in places I will see rather than just trying to remember to tell myself often adds a sort of emphasis. Typically, my mind is going in several different directions at once and while constantly trying to juggle the things in front of me usually means there isn’t any extra room for little reminders like, “Believe in yourself a little more”.

It’s important to find the thing you may be struggling in in a particular moment and pay it a little added attention. You’d be amazed at how much you can train your mind into not only thinking but also believing in something when you are consistent in the saying or the doing. This applies to both positive and negative thoughts. More often than not our minds have a way of convincing ourselves of things that don’t actually exist, we are the very creator of our own fears, feed our ideas with self-doubt, subconsciously or not subconsciously put ourselves down by comparing ourselves to others and convince ourselves that we are less than enough. In reality, all of this can be eliminated by the simple practice of telling yourself otherwise. I say simple, and you’re probably thinking I’m exaggerating, but it really is as easy as writing down a thought that you’ll be reminded of frequently. So frequently, in fact, that sooner or later you’ll actually believe it.

There are various studies out there that prove how incorporating positive affirmations into your life actually do impact your emotional state in an impactful way. These repeated words of positivity, in turn, will also have an effect on your physical state by reducing stress, which over time, can result in heart problems, weight gain, muscle tension and pain, stomach disorders and disrupted sleep.

It’s no wonder there are so many great resources out there that show you how to incorporate these positive vibes into your life. In just a short time of doing so, I can already see a small change in how I react to certain situations, how I approach and work through problems, how I interact with others and how I feel about myself. Although, it isn’t an over-night fix, it certainly is worth the little extra effort making this a part of my day. I encourage you to give it a try, even if you don’t feel you need it. Everyone can always use a little reminder of just how awesome of a human they have the potential to be.

Speaking of awesome, these waffles are the perfect example of that. Truthfully it was more of an accidental recipe that went surprisingly right. This recipe is the perfect way to start your day (along with your positive affirmation, of course) and can be made to enjoy with either savory or sweet toppings! Nothing beats a healthy, gluten-free, dairy-free waffle recipe packed with sweet potato!

 

 

 Grain-free Sweet Potato Waffles

Gluten-free/Dairy-free/Nut-free/Soy-free

Makes: 4 waffles (serves 2)

Prep time: 5 minutes/ Cook time: about 6-8 minutes depending on waffle iron

 

  • 1/2 c sweet potato, cooked and mashed
  • 1 c almond milk (can sub any dairy-free variety)
  • 1 c gluten-free rolled oats
  • 1 large whole egg + 1 egg white
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1/4 tsp baking powder
  • pinch of sea salt
  • cooking spray for waffle iron
  • optional: add-ins to your batter such as chocolate chips, crushed nuts, berries, banana or coconut chips
  1. In a blender combine all of the ingredients except the add-ins if using.
  2. Pulse on high until you achieve a smooth consistency.
  3. If using add-ins fold in by hand.
  4. Coat your pre-heated waffle iron with cooking spray and ladle one quarter of the batter onto the iron and close lid. Let cook as directed for your specific iron until golden brown (timing may vary).
  5. Remove the waffle and set aside to cool. Repeat step 3 for the remaining waffles.
  6. Serve waffles warm with your favorite toppings. Just a little syrup is perfection!
