I feel like I’m starting to find my groove lately. I mean it was bound to happen again at some point right? For example, the other day I had no plan for dinner aside from some defrosted chicken in the fridge. Having been preoccupied with the baby amongst other things during the afternoon all of a sudden it was like, “Oh it’s 5 o’clock already!”, which translated as time to throw something together for dinner and bottle time. So in supermom-like speed I whipped up a chicken, sweet potato and veggie bake AND fed the baby. The kicker is I didn’t it all under 25 minutes! (Not that I was watching the clock or anything.) No joke. I mean I don’t want to toot my own horn here but, yeah, I guess I kinda am. I mean it only took four months to get here.
And it’s recipes like these no bake protein balls filled with cranberry and orange that take all of 10 minutes to throw together that make me feel like I could be the next contestant on Chopped. Okay maybe nothing THAT crazy. I don’t do well under the pressure of using strawberry popsicles, tortilla chips, condensed milk and celery as a dessert (seriously though that was in an actual episode). So, although I’m not THAT good, these little bites of goodness make me feel like I got it all under control as a mom, girlfriend, blogger, yogi, crime fighter (okay not crime fighter so much), grammy worthy nursery rhyme singer, pro at diaper changing (even the worst of them) and expert laundry folder (I can fold a mean pair of sweatpants). I can now also add skilled protein ball maker to the resume. Cause who doesn’t want those kind of life skills. 😉
Cranberry Orange Protein Balls
Makes: 12 balls/ Total time: 10 minutes
- 1/2 c creamy almond butter
- 3 tbsp honey
- 2/3 c vegan vanilla protein powder (I used this)
- 2 tbsp fresh squeezed orange juice
- 1 tsp orange zest
- 1/4 c dried cranberries
- In a medium sized bowl combine the almond butter and honey and mix well.
- Add the protein, orange juice and orange zest. Mix until all of the ingredients are incorporated. (If the consistency seems too dry, as it may vary depending on the protein powder used, add additional orange juice 1/2 tablespoon at a time. The consistency you are looking for is soft and moldable but not sticky.)
- Fold in the dried cranberries.
- Form the balls by rolling 1 tablespoon of the mixture in between your palms. Repeat until all of the mixture is used.
- Place the balls in a tightly sealed container and store in the fridge for up to 5 days until ready to enjoy. Freeze for a longer shelf life.
