Plantain Pizza Crust

I have to admit, the closer vacation gets the more I find myself side-eyeing my swimsuits that lay in a pile in the bedroom I’ve titled “possible vacation wear”. There’s nothing more terrifying after a stretch of cold weather and the holiday season than to put on a swimsuit. It’s similar to jumping in the freeing cold New England ocean at the beginning of summer. The anticipation of that first fire-y sting when the icy water touches your skin but then after a few seconds the shock goes away and it’s, well, tolerable. I seriously don’t know if it’s ever really enjoyable. Even if you don’t mind wearing a swimsuit there’s always a moment when you find yourself tugging at the top, adjusting the bottom, sucking in your stomach just a bit more or even lathering up in extra self tanner just to make sure you look the part. We all, even those that boast confidence, have our moments of doubt once in a while whether it be in our appearance, personality, skills, etc.. It’s a constant work in progress and that’s okay. Being comfortable in your own skin isn’t an easy feat. Like anything it takes hard work and determination to feel like your best self. Of course getting your hair done, buying a new outfit and losing weight are all ways in which one can feel on top of the world but I, through personal experience, have found those to be only temporary fixes. Yes, all of those things ARE great for your well-being but you can’t put a band-aid on a cut and expect it to be gone. All of the real work starts from the inside and works its way out. What you put into your body both physically and emotionally is what is going to REALLY create the best and happiest version of you and most importantly the effect it will have will last a lot longer than said hair or clothing.

I’ve learned one of the simplest ways to feel good from the inside out is through food. Making smart choices like whole grains, healthy fats, fuel-packed proteins and even the occasional (smart) sweets provide you with what your body needs to build strong bones, a healthy heart and a powerful mind. That’s why I love what I do so much. Being able to create healthy recipes that are simple, delicious and good for you make those smart choices not only the easy ones but also the best ones. By properly fueling your body with all of the essential building blocks you can create a strong foundation to support a feel-good way of life, both physically and emotionally. It’s truly amazing what the effects smart food choices have. Keep in mind it’s not an overnight cure-all but with a little time and patience the compound effect it will have will be worth it.

As a healthy food blogger I act as a guide in the best way I know how. It doesn’t mean my approach is the right one but it has been/is for me so it may be right for you too. I’m here to offer you support, ideas, inspiration and a even a bit of reality, as my my feel-good attitude is also a work in progress. I find the realistic approach is knowing it’s all about baby steps, small changes and the ability to understand nothing worth while comes easy. Trust that every small (positive) change will amount together to have a powerful and lasting impact on your body and mind and always believe that you CAN achieve the life you want and the happiness you set out for.

A little pizza doesn’t hurt the feel-good approach does it? This healthy crust is made simply with plantains as the base. Who would have thought a fruit could become a pizza crust! Well I assure it not only works well but it tastes even better. This crust bakes up to a crispy golden foundation for any topping(s) you desire. I layered this pie with shaved sirloin, caramelized red onion, goat cheese and Trader Joe’s pizza sauce. I suggest doubling the recipe and freezing one pre-made crust for a quick weeknight dinner.


Plantain Pizza Crust

Gluten-free/Paleo/Vegan/Nut-free

Makes: 1 crust which serves 2-4

Prep time: 10 minutes

Total cook time: about 30 minutes

INGREDIENTS

  • 3 large plantains (the greener the better), peeled and sliced
  • 2 tbsp coconut oil
  • 1 c water
  • 2 tbsp olive oil
  • 1 1/2 tbsp coconut flour
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • a pinch of crushed red pepper (optional)
  • a pinch of sea salt
  • toppings of choice (I used shaved sirloin, caramelized red onion, goat cheese and Trader Joe’s pizza sauce)

INSTRUCTIONS

  1. Preheat oven to 450F.
  2. In a saute pan over medium heat, fry the sliced plantains in the coconut oil until golden brown and soft, about 10 minutes. Remove from heat and let cool for a few minutes.
  3. Add the plantains to a high powered blender or food processor and pulse until smooth. Add the water, olive oil, flour and spices and pulse again until a sticky dough forms.
  4. Wet hands and press dough out onto a pizza pan, stone or baking sheet to about 1/4 inch thick.
  5. Bake for 18 minutes or until edges are golden brown.
  6. Remove the crust from the oven and top with desired toppings. Return the pan to the oven for an additional 5-7 minutes.
  7. Serve pizza warm and store any leftovers in the fridge.
