Peppermint Chocolate Bark

Since I’be been running around frantically (as we all probably are) I had minimal time to write this entry, however I am pretty proud of my myself for getting up this last minute post before Christmas anyway. Nothing like squeezing in one more thing! Ha! I mean, I just couldn’t leave you all without an extra special treat…think of it as my gift to you (and like you’re even surprised it involves chocolate- layers upon layers!). There’s nothing fancy about this treat other than it’s ability to make you look like a kitchen whiz and it really only takes 15 minutes to prepare (but you don’t have to tell anyone that). I love the blend of peppermint and chocolate together. Nothing says the holidays quite like this combo! Not only does it look yummy on a pretty platter but it doubles as a great gift. Just wrap a couple of pieces up in some clear candy bags, tie with a decorative ribbon and you’ve got yourself a delicious gift anybody (including myself) would love!

Peppermint Chocolate Bark

Glutenfree/Nut-free/Soy-free

Serves: varies/ Prep time: 15 minutes/ Freeze time: 1 hour+

  • 2- 12 oz bags milk chocolate
  • 1- 12 oz bag white chocolate
  • 1 tsp peppermint extract
  • 5 large candy canes (or about 10 small)
  1. Line a sheet pan with wax paper and set aside.
  2. In 2 double boilers melt both the milk and white chocolate separately. Make sure you stir frequently as it begins to soften so it doesn’t burn and melts evenly.
  3. When the milk chocolate has melted pour half of it onto the sheet pan and spread out evenly. Freeze for 5 minutes to set.
  4. Remove the pan from the freezer. Mix in the teaspoon of peppermint extract to the white chocolate and pour over the first layer. Spread out evenly and freeze to set for 5 more minutes.
  5. Remove the pan again and pour the remaining milk chocolate over the 2 layers and spread out to cover.
  6. Sprinkle the crushed candy canes over the top and freeze again for at least 1 hour.
  7. When ready, remove from the freezer and let the pan sit at room temperature for about 10 minutes (this will make breaking it apart easier). Using your hands, break apart the bark into bite sized pieces.
  8. Serve immediately and/or store any leftovers in the fridge or freezer to keep.
