Hazelnut Mocha Overnight Oats

I’ll tell you, since becoming a mom my eating habits haven’t been priority. I’ve certainly put my meal prep and eating regularly on the back burner (no pun intended). However, as we are all slowly becoming adjusted to this new life I’m making sure to set aside time for me too as I’m realizing just how important staying healthy is to the title “mom”. Healthy doesn’t just mean physically, like eating right and working out. Mental health is also crucial, not just as a parent, but for anyone. There’s a lot to be said about doing positive things for yourself, like taking a yoga class, reading a good book or even just something as simple as reminding yourself how good of a job your doing every now and again. Being happy is just as important as eating a salad.

And what kind of title would The Happy Hungry Yogi be if I wasn’t happy OR healthy. So, finding meals that are easy to prepare that also keep me fueled for a day of being mom is essential. As you know, if you’ve followed along from the start, overnight oats is the recipe that really got this blog going. I’d be nowhere without that bowl of hearty oats topped with all the delicious things like fruit, nuts and (my favorite) chocolate. And speaking of chocolate who doesn’t need a bit of the sweet stuff every now and then. This easy mocha version combines the goodness of fiber filled oats, antioxidant packed cacao and a little boost of caffeine to get you through the morning. The best part is you get to mix this meal up the night before so there’s no excuse to skip breakfast. Meaning there’s no excuse to not make a little time for you!

Hazelnut Mocha Overnight Oats

Gluten-free/Vegan/Nut-free

Serves: 1/ Prep time: 5 minutes/ Total time: 4 hours or up to overnight

  • 1 c gluten-free oats
  • 1 c unsweetened almond milk
  • 1/2 c brewed hazelnut coffee (you can actually use any flavor you’d like if preferred!)
  • 2 tbsp maple syrup
  • 1 tbsp cacao powder
  • 1 tsp cinnamon
  1. In a sealed jar add all ingredients.
  2. Cover tightly and give a good shake to combine.
  3. Place the jar in the fridge for at least 4 hours to overnight (will keep for up to a couple of days).
  4. Enjoy cold/warm topped with a sprinkle of cinnamon and dairy-free chocolate chips if desired!
